This recipe goes with Lemon Meringue Cake Ingredients:
1 1/2 cups sugar |
1/2 cup cornstarch |
1/4 teaspoon salt |
6 egg yolks |
2 1/2 cups half-and-half |
1/4 cup butter or margarine, cut up |
1 tablespoon grated lemon rind |
3/4 cup fresh lemon juice |
Directions:
1. Bring first 5 ingredients to a boil in a 3-quart saucepan over medium heat, whisking constantly. Boil, whisking constantly, 1 minute or until thickened. Remove from heat; whisk in butter and lemon rind. Gradually whisk in lemon juice until smooth; pour into a bowl. Cover and chill at least 4 hours. |
