This is a wonderful lemon filling for between cake layers or as a topping on angel cake. You could put it on a pound cake or anywhere that you like lemon. It is nice and lemony. I like to use real lemons and real grated lemon rind. Ingredients:
1 cup sugar |
4 tablespoons cornstarch |
1/2 teaspoon salt |
1 cup water |
2 tablespoons lemon rind |
1/2 cup lemon juice |
2 tablespoons butter |
Directions:
1. Mix ingredients in a saucepan. 2. Bring to a rolling boil and boil for 1 minute, stirring constantly. 3. Remove from heat and cool stirring occasionally. 4. Chill before using. |
