For the family and friends that can't eat chocolate, this lemony fudge is divine. Servings are tough to determine. Your milage may vary. ;-) Ingredients:
3 cups granulated sugar |
3/4 cup unsalted real butter |
2/3 cup evaporated milk |
12 oz. lemon chips (from king arthur four site) |
7 oz. jar marshmallow cream |
2 tsp. lemon extract |
several drops of yellow food coloring |
Directions:
1. Microwave method: 2. Microwave butter in 4-quart microwave-safe bowl on HIGH (100%) 1 3. minute or until melted. Add sugar and milk; mix well. Microwave on HIGH 4. 5 minutes or until mixture begins to boil, stirring after 3 minutes. Mix well; scrape bowl. Continue microwaving on HIGH 5 1/2 minutes; stir after 3 minutes. Stir in chips until melted. Add marshmallow cream and food coloring and mix. Add lemon extract and mix well. Pour into greased 9-inch square pan or 13x9-inch baking pan. 5.
