Lemon Dill Chicken Burgers |

Lemon and dill add a unique, zesty flavor to these ground chicken burgers, and a slice of creamy Havarti cheese melted on top during the last few miutes of grilling tops them off just right!! From The Big Book, of Backyard Cooking. Ingredients:
1.5 - 2 lbs. ground chicken (or turkey), both white and dark meat to keep moist during grilling |
1/2 c finely chopped yellow onion |
2 t chopped fresh dill |
1.5 t fresh squeezed lemon juice |
1.5 t grated lemon zest |
salt and fresh ground pepper |
vegetable oil for grill rack |
4 slices havarti cheese |
4 keiser or sourdough rolls, or other good hamburger buns |
butter - softened |
1 ripe, red tomato, cut into 4 slices |
red leaf or romaine lettuce |
Directions:
1. Combine chicken, onion, dill, lemon juice and zest in large mixing bowl with hands 2. Lightly sprinle with salt and pepper and mix well 3. Break into 4 equal balls and shape into patties 4. Oil grill rack and arrange 4-5 inches from heat source 5. Grill burgesr on high until cooked through, internal temperature should be 165. About 5 minutes per side. Careful to turn only once, and avoid mashing! 6. Top each burger with a slice of cheese and cook one minute longer - until cheese melts 7. Spread butter on insides of bun and toast on the grill 8. Serve with tomato and lettuce |
