This is a great weeknight recipe as it is ready in 15 minutes! I like it with tilapia but you may substitute Boston bluefish or red snapper. It goes great with couscous and a green vegetable side dish, such as asparagus. Ingredients:
2 tablespoons olive oil |
2 garlic cloves, sliced |
1/4 teaspoon salt |
1 pinch ground black pepper |
4 tilapia fillets (about 1 lb.) |
2 tablespoons lemon juice |
1 teaspoon dijon mustard |
1/4 teaspoon dried dill weed |
Directions:
1. In a small bowl, whisk together the olive oil, garlic, salt and pepper. 2. Spoon over the fish fillets. 3. Broil on a greased baking sheet 6 inches from the heat for 8 minutes or until the fish flakes easily when tested with a fork. 4. To serve, whisk together the lemon juice, mustard and dill weed. 5. Drizzle over the fish. |
