Ingredients:
4 (4-ounce) orange roughy or flounder fillets |
2 teaspoons fresh lemon juice |
2 tablespoons chopped fresh chives or 2 teaspoons freeze-dried chives |
2 tablespoons reduced-fat mayonnaise |
1 1/2 tablespoons dijon mustard |
lemon slices (optional) |
Directions:
1. Place fillets in an 11- x 7- x 1 1/2-inch baking dish coated with cooking spray; brush fish with lemon juice. Bake at 400° for 12 minutes. 2. While fish bakes, combine chives, mayonnaise, and mustard, stirring well. 3. Spread mayonnaise mixture evenly over fish. Bake 3 additional minutes or until fish flakes easily when tested with a fork. Garnish with lemon slices, if desired. |
