This is one of my favorite cheesecake recipes not only because it is easy, but it is good and lemony. Enjoy Ingredients:
1-1/2 cups graham cracker crumbs |
1/2 cup margarine melted |
1/3 cup cold water |
3 large eggs separated |
1 teaspoon grated lemon peel |
1/4 cup granulated sugar |
1 envelope unflavored gelatin |
1/3 cup lemon juice |
1/2 cup sugar |
16 ounces cream cheese softened |
Directions:
1. Combine crumbs, sugar and margarine and reserve 1/2 cup. 2. Press remaining onto bottom of spring form pan. 3. Soften gelatin in water then stir over low heat until dissolved. 4. Add juice, egg yolks, 1/4 cup sugar and peel. 5. Cook stirring constantly over medium heat for 5 minutes. 6. Gradually add to cream cheese mixing at medium speed until well blended. 7. Beat whites until foamy then gradually add remaining sugar and beat until peaks form. 8. Fold into cream cheese mixture then pour over crust and top with reserved crumbs. 9. Chill until firm. |
