These are so light and fluffy and packed full of lemon flavor. These are always a big hit when I make them. Hope you enjoy as much as we do. Ingredients:
1/3 cup butter |
1 cup granulated sugar |
1 cup all purpose flour |
2 eggs |
2 tablespoons all purpose flour |
2 teaspoons finely shredded lemon peel |
3 tablespoons lemon juice |
1/4 teaspoon baking powder |
1/8 teaspoon salt |
powdered sugar |
Directions:
1. For crust in a medium mixing howl beat butter with an electric mixer on medium to high speed until softened. 2. Add 1/4 cup of the sugar and beat until thoroughly combined. 3. Beat in 1 cup flour until mixture resembles fine crumbs. 4. Press mixture into an ungreased square baking pan and bake at 350 for 15 minutes. 5. Meanwhile for lemon mixture in the same mixing bowl beat eggs with an electric mixer on medium speed just until foamy then add remaining sugar, flour, lemon juice, baking powder and salt. 6. Beat on medium speed for 3 minutes then stir in lemon peel. 7. Pour lemon mixture over baked crust and bake at 350 for 25 minutes. 8. Cool in pan on a rack. 9. Sift powdered sugar over top. |
