Another family recipe. Us Brits call this Lemon Cheese - don't know why because there's no cheese involved........ Ingredients:
1 lb sugar |
4 ounces butter |
4 eggs, beaten |
the juice of 4 large lemons |
glass jars, sterilized |
Directions:
1. In a saucepan, melt the butter into the lemon juice 2. Combine the beaten eggs with the sugar and add to the pan 3. Heat slowly, stirring, until the mixture thickens to the consistency of thin custard. 4. Pour into the jars - it will thicken as it cools. 5. Makes about 2 lbs |
