Wonderful on fresh fruit or bread. Make sure to use only the zest of the lemons and avoid the pith (the white part under the yellow skin). Ingredients:
5 egg yolks |
1 cup sugar |
4 lemons |
1/2 cup unsalted butter |
Directions:
1. Juice and zest the lemons. 2. Combine egg yolks and sugar and whisk. 3. Add zest and 1/3 cup lemon juice. 4. Put bowl over simmering water and whisk until thick and light yellow. Should coat a spoon. 5. Take off heat and add butter one tablespoon at a time, whisking after each addition. 6. Chill. |
