This is a neat citrus tasting cupcake & has been a big hit when I make it! Ingredients:
2 1/3 c. all purpose flour |
1 1/2 t. baking powder |
1/2 t. baking soda |
1/4 t. salt |
1 c. real butter ( softened) |
2 c. sugar |
1 c. buttermilk |
2 t. lemon peel |
2 t, lemon juice |
Directions:
1. Combine: flour & spices set aside 2. beat eggs with butter & sugar 3. gradually add flour mixture & buttermilk 4. Stir in lemon peel & juice 5. Bake 350 for 12-15 mins 6. Icing: 6 oz. softened cream cheeze 7. 1/2 c softened butter 8. 2 c powdered sugar 9. 1 t. lemon juice 10. Mix all together with mixer & ice cupcakes |
