LEMON CRUNCH ICE CREAM This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Cougar Estate in Richardson, Texas in 2006. Ingredients:
2 cups milk |
1 cup sugar |
1/2 cup fresh lemon juice |
1 teaspoon grated lemon peel |
2 egg whites |
2 tablespoon sugar |
1 cup whipping cream |
1/2 cup crushed lemon drops or peanut brittle |
Directions:
1. Combine first 4 ingredients then freeze until firm. 2. Beat egg whites to a meringue with sugar then whip whipping cream. 3. Remove frozen mixture to a chilled bowl then beat until fluffy. 4. Fold in meringue and whipped cream then add lemon drops or peanut brittle. 5. Return to tray then freeze to ice cream consistency. |
