LEMON CRULLERS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Cooke Estate in Glendale, Texas in 1996.
Ingredients:
1 egg
grated rind of 1 lemon
4 tablespoons sugar
1 tablespoon water
1 pinch salt
2 tablespoons olive oil for batter
3/4 cup olive oil for frying
2 teaspoons lemon juice
1-1/4 cup flour
1 teaspoon baking powder
Directions:
1. Beat egg, grated lemon rind, sugar, water and salt in bowl.
2. When mixture is light and foamy add 2 tablespoons olive oil and lemon juice.
3. Mix in flour and baking powder.
4. Heat oil until it begins to crinkle.
5. Drop dough off tip of tablespoon into hot oil.
6. The crullers should puff and brown almost instantly.
7. Turn and brown the second side.
8. Remove from oil and drain on paper towels.
9. While still warm roll in sugar.
