I feel like a little kid whenever I eat lemony crepes. A lite, thin,warm, lemony crepe with raspberry sauce. Ingredients:
flour |
sugar |
salt |
eggs |
milk |
butter |
lemon extract |
raspberries |
cool whip |
Directions:
1. Blend and mix all ingredients well* 2. in a bowl add: 1 and 1/4 cups flour 3. 2 tbsp. sugar 4. Pinch of salt 5. 3 eggs 6. 1 1/2 cups milk 7. 2 Tbsp. butter, melted 8. 1 tsp. lemon extract *Blend well* 9. pour a very thin layer of the combined ingredients over medium-high heat in a medium to large NON STICK Skillet. 10. Each crepe is ready in 30-60 seconds depending on how thin 11. You only have to cook the one side because they are so thin. 12. Your fist few are more like practice ones. 13. I keep a can of PAM non stick spray handy. 14. Use a wide spatula to lift the edges as they tend to brown early. 15. Crepes are very thin and if they stick they will darken and brown very quickly 16. Keep warm and covered and the crepes should peel apart from one another nicely when you serve them. 17. In a bowl put 2 cups of Raspberries and add sugar to your own preference of tasting 18. dollop whip crème and spoon some raspberries on to warm crepe decorate and feel like a kid again! |
