This recipe calls for lemon curd and ice cream. No substitute for the lemon curd, but it is easy to make. You can substitute a sorbet for the ice cream to make it lighter. Ingredients:
1 cup lemon curd |
1 liter sparkling water, chilled |
1 1/2 pints vanilla ice cream (8 scoops) |
Directions:
1. Spoon 1/4 cup lemon curd into each of 4 pint sized dessert glasses. 2. Add 1/4 sparkling water and stir to combine. 3. Add 2 scoops of ice cream to each glass; top with additional sparkling water. 4. Serve immediately with straws. |
