These are so good for a tea party, which Im really into right now...This recipe is from a 2006 Teatime Mag. Hope you enjoy... Ingredients:
2 cups all purpose flour |
1/2 cup sugar |
1 1/2 teaspoon baking powder |
1/2 teaspoon baking soda |
1 teaspoon lemon zest |
6 tablespoons butter, at room temperature |
1 teaspoon fresh lemon juice |
1 1/4 cups plus 2 tablespoons whipping cream, divided |
Directions:
1. Preheat oven to 350 degrees; lightly grease baking sheet. 2. Combine flour, sugar, baking powder, baking soda and lemon zest in a medium bowl. 3. Cut in butter using pastry blender until mixture is crumbly. 4. Add lemon juice and 1 1/4 cups whipping cream, stirring just until dry ingredients are moistened. 5. On lightly floured surface roll dough to 3/4 inch thickness. 6. Cut with 2 1/2 inch round cutter, and place on baking sheet. 7. Brush tops evenly with 2 tablespoons cream. 8. Bake 17 to 19 minutes or until lightly brown. 9. Makes 10 scones |
