Lemon-Cream Fruit Parfaits |

This came from Weight 4 Me. I have not tried this, just posting for safe keeping. Ingredients:
3 ounces sugar free lemon gelatin |
1 cup boiling water |
8 ice cubes |
1/4 cup fat-free buttermilk |
2 tablespoons cream cheese |
1 teaspoon vanilla extract |
2 teaspoons fresh lemon juice |
1/2 teaspoon grated lemon zest |
2 tablespoons powdered sugar |
1/2 cup light whipped topping |
1/4 cup juice packed crushed pineapple, well drained |
1 cup thinly sliced banana |
1 cup quartered strawberry |
Directions:
1. In a mixing bowl, combine gelatin and boiling water. Stir until gelatin dissolves completely. Add ice cubes and stir until melted. Pour equal amounts into 4 parfaits glasses or wineglasses. Chill until set. 2. In a mixing bowl, combine buttermilk, cream cheese, vanilla, lemon juice, lemon zest, and powdered sugar. Using an electric mixer, blend until smooth. Spoon equal amounts over set gelatin. Top each with 2 tablespoons whipped topping, 1 tablespoon crushed pineapple, 1/4 cup banana slices, and 1/4 cut strawberries. Serve.
