Great American Heritage cookbook Ingredients:
1/2 tsp salt |
2 tbsp cornstarch |
1 cup sugar |
2 eggs, beaten |
3/4 cup margarine |
1/2 tsp vanilla extract |
1/2 cup lemon juice |
3/4 cup crushed saltine crackers |
1 cup packed brown sugar |
1 cup flour (doesn't say which kind) |
1/2 tsp baking soda |
1 cup shredded coconut |
Directions:
1. Combine salt, cornstarch, sugar and 1 cup cold water in saucepan. Mix well. Cook over medium heat until thick, stirring constantly. Pour into top of double boiler. Cook for 10-12 minutes, stirring occasionally. 2. Stir a small amount of hot mixture into eggs. Stir eggs into hot mixture. Cook for 4-5 minutes longer. Remove from heat. 3. Stir in /14 cup margarine, vanilla and lemon juice. Cool. Mix saltine crumbs, brown sugar and /12 cup melted margarine in bowl. Add flour, soda, and coconut. Mix well. 4. Press 3/4 of the mixture into buttered 9 inch square baking pan. Pour lemon filling over top. Sprinkle with remaining crumb mixture. Bake at 350 degrees for 15-20 minutes or until lightly browned. Chill. Cut into squares. |
