1 1/4 cups all-purpose flour, plus |
2 tablespoons all-purpose flour |
2 teaspoons baking powder |
1 teaspoon baking soda |
1/2 teaspoon salt |
3/4 cup cornmeal |
1/4 cup corn oil or 1/4 cup vegetable oil |
2 cups soymilk |
1/4 cup soy yogurt |
2 lemons, juice and zest of |
1/4 cup sugar |
Directions:
1. preheat waffle iron according to the manufacturer's directions. 2. sift together the flour, baking powder, baking soda, salt, and cornmeal in a large mixing bowl. 3. in a med-sized bowl, mix together the oil, soy milk, yogurt, lemon juice, and sugar until well-combined. 4. make waffles according to the directions on the iron. 5. serve with blueberry sauce. |
