I love these, they are so tender and lemony, with a white powder sugar coating on the outside. Enjoy Ingredients:
1-cup all purpose flour |
3/4 cup confectioner' s sugar, divided into 1/4-cup and 1/2 cup |
1 lemon, zest only plus juice from 1/2 of it |
1 stick butter |
1/4 tspn vanilla |
Directions:
1. Adjust oven to lower-middle position and heat oven to 350 degrees. 2. Mix flour, 1/4-cup confectioners sugar and lemon (zest and juice). Add butter and vanilla and mix with hands to form a dough. 3. Drop cookie dough by generous tsps onto a parchment-lined cookie sheet. Bake until cookie bottoms are golden brown, about 15 minutes. Transfer cookies to a wire rack to cool completely. 4. Place remaining 1/2-cup confectioners' sugar into a zip loc bag. Drop cookies in (about four at a time) and shake until 5. cookies are well coated. |
