This is a very light and fluffy muffin with mounds and mounds of great taste. Enjoy Ingredients:
1 cup all bran |
1-1/2 cups milk |
1 lightly beaten egg |
2 tablespoons cooking oil |
juice and grated rind of 1 lemon |
1/2 cup coconut |
1-1/2 cups self rising flour |
1/4 cup caster sugar |
Directions:
1. Preheat oven to 375. 2. Prepare pans. 3. Place bran and milk in a large bowl and allow to stand 5 minutes to soften. 4. Stir in egg, oil, lemon juice and rind. 5. Combine flour, sugar and coconut. 6. Stir dry mix into wet mix until just moistened. 7. Spoon into pans and bake for 30 minutes. |
