Lemon Clove Cookie Sandwiches |

I was intrigued by this recipe. I love lemon but I have never had it paired with clove before. Ingredients:

3/4 cup land o' lakes butter, softened |
3/4 cup powdered sugar |
1 egg |
1/2 tsp lemon extract |
1 2/3 cups all-purpose flour |
1/4 tsp ground cloves |
1/8 tsp salt |
coarse grain sugar |
filling |
2 1/2 cups powdered sugar |
1/4 cup land o' lakes butter, softened |
2 tbsp lemon juice |
1/2 tsp lemon extract |
1 to 2 tbsp land o' lakes fat free half and half |
Directions:
1. Combine 3/4 cup butter and 3/4 cup powdered sugar in large bowl; beat at medium speed until creamy. 2. Add egg and 1/2 tsp lemon extract; continue beating until combined. Reduce speed to low; add flour, cloves and salt. 3. Divide dough in half; shape each half into 8-inch log. Wrap each in plastic food wrap and refrigerate until firm (at least 2 hours). 4. Heat oven to 350 degrees. 5. Cut logs into 1/4-inch slices with a sharp knife. 6. Place 1 inch apart onto ungreased cookie sheets. 7. Sprinkle half of cookies with coarse grain sugar. 8. Bake for 8 to 10 minutes or until edges begin to brown. 9. Transfer to wire rack and cool completely. 10. Combine all filling ingredients in a medium bowl, adding enough half and half for desired spreading consistency. Beat on low speed until well mixed. 11. Spread about 1 tsp of filling on bottom of each cookie that is without the sugar. 12. Top with remaining cookie, sugar side up. |
