Okay, so not so healthy, but amazing. The lemon really adds something to otherwise rather plain cookies. This is the halved recipe (and I still got 24 cookies out of it!), the original can be found here: /article.cfm/chocolate_chip_cookies_with_lemon Ingredients:
1/2 cup all-purpose flour |
3/4 cups white whole wheat flour |
1/2 tsp. baking soda |
1/4 tsp. salt |
1/4 cup butter, softened |
1/4 cups sugar |
1 egg whites |
1 tbsp lemon |
1/2 tsp. vanilla extract |
1/4 cup white chocolate chips |
Directions:
1. Preheat oven to 375 / 190 degrees. Line two cookie sheets with parchment paper. 2. Sift together flours, baking soda and salt. 3. In a large mixing bowl, beat butter and sugar together. Fold in egg whites, lemon juice, lemon zest and vanilla. 4. Add dry ingredients. Mix well. Stir in chocolate chips. 5. Drop by rounded teaspoons onto prepared cookie sheets. Bake 7-10 minutes or until very lightly browned. 6. Makes 36 cookies. |
