This is an easy marinated scallop recipe that can be used as an appetizer, or added to skewers with shrimp, mushrooms, onions, peppers, etc, for a complete meal! Prep time includes marinating time. Ingredients:
2lbs scallops, fresh or thawed |
1lb bacon, sliced in half, and each slice then halved, lengthwise, or as needed to fit around scallops |
juice from 1 large lemon(reserve about 1t for sauce) |
1t dijon |
1-2t adobo sauce from canned chipotles, to taste |
2t butter, melted(or sub olive oil) |
1t fresh parsley, finely chopped(optional) |
sea or kosher salt and fresh ground black pepper |
metal or bamboo skewers |
chipotle dipping sauce |
1 cup mayonnaise |
1t dijon |
1 canned chipotle in adobo sauce, very finely diced, and not rinsed(this is 1 pepper, not 1 can of peppers |
dash of worcestershire sauce |
2t butter, softened |
reserved lemon juice, from above |
1t grated onion or 1t onion powder |
Directions:
1. If using bamboo skewers, submerge them in water and set aside, to soak. 2. Combine melted butter, Dijon, adobo sauce, lemon juice and salt and pepper in large zipper bag or plastic container. 3. Rinse scallops and pat dry. Add to marinade and carefully toss or fold, to coat. Refrigerate 30 minutes. 4. Place bacon strips(enough to have 1 piece for each scallop) on cooling rack over deep baking sheet and bake at 450 for a few minutes until beginning to cook, but still pliable. 5. Combine all dipping sauce ingredients and refrigerate until serving. 6. Wrap one piece of bacon around each scallop. Secure with toothpick, if needed, or just use end of skewer to fasten ends of bacon together to help secure it to the scallop. 7. Skewer scallops on skewers and grill over medium coals 2-4 minutes, each side, depending on size of scallops. Do not over cook. 8. Serve with dipping sauce. |
