Lemon Chicken with Pasta Ingredients:
2 breast of chicken, skinned and deboned |
3 tbsp flour |
2 tbsp olive oil |
1 cup chicken broth |
3 tbsp lemon juice |
1/2 tsp salt |
1/4 tsp pepper |
1 tsp onion powder |
1/2 tsp thyme |
6 cups whole wheat pasta |
Directions:
1. Mix flour, salt and peper. Lightly coat the chicken in the flour mixture. Reserve the extra. 2. Cook the pasta as per directions on the box. Reserve on the side. 3. In large skillet, warm 1 tbsp olive oil over medium heat. Add chicken and brown on one side. Add rest of oil. Turn chicken and brown well. Remove chicken. 4. Stir in reserved flour and stir until incorporated. Add broth, lemon juice, thyme, and onion powder. Bring to a boil, stirring constantly. 5. Serve chicken on a bed of pasta topped with sauce. |
