Lemon Chicken Soup With Spaghetti |

My favorite way to have chicken noodle soup. I personally am notorious for my love of lemon juice (I drink it straight) and this might be too tart for some people. Adjust amount of lemon juice to personal taste. Ingredients:
6 cups chicken broth |
1/4 cup lemon juice |
1 bay leaf |
3 ounces spaghetti, approx 1 cup & broken into 2 inch pieces |
2 (6 ounce) chicken breasts, diced into small bite-sized pieces |
Directions:
1. Combine the first 3 ingredients in a pot and bring to a boil. 2. Boil for approximately 20-25 minutes. 3. In the meantime, dice the chicken & break the spaghetti. 4. Add the chicken & spaghetti, reduce to a simmer, cover. 5. Simmer for 10-15 minutes, or until the spaghetti is cooked through. |
