Lemon Chicken Salad with Tarragon |

Ingredients:
5 cups shredded cooked chicken (from a 3lb bird) |
5 tablespoons mayonnaise |
2 tablespoons minced shallot |
1 1/2 teaspoons dijon mustard |
grated zest of and juice of 1/2 lemon |
1/4 teaspoon freshly ground black pepper |
1/3 cup chopped celery |
bunch of tarragon leaves |
Directions:
1. In large bowl, whisk together mayonnaise, shallot, Dijon mustard, zest and juice of the lemon, and ground pepper. Stir in chicken and celery. Season to taste with salt and pepper. Sprinkle with fresh tarragon leaves. |
