Really easy lemony chicken rice soup. Can add pieces of cooked chicken if desired. Ingredients:
6 cups chicken broth, low sodium |
1 can cream of chicken soup |
1 egg |
4 cups rice, cooked |
1 cup lemon juice |
Directions:
1. Bring 6 cups of chicken broth to a boil. Remove from heat. Take about a cup of the broth out and mix it with the egg. Return egg and broth mixture to the rest of the broth. Turn to medium heat, and stir until the egg is cooked. Add the lemon juice, cream of chicken soup and rice. Add salt and pepper to taste. |
