This is a dish my mom taught me, it has always been a favorite in my family and it is extremely simple. It is best served over egg noodles and/or Rice o Roni 'Fried Rice'. Ingredients:
4 -6 chicken breasts, trimmed |
2 (10 ounce) cans cream of broccoli soup |
1 soup can worth milk |
1 soup can worth lemon juice (though you can add more if you want) |
1 tablespoon margarine or 1 tablespoon butter |
Directions:
1. Trim the chicken breasts and place in skillet with margarine. Cook chicken until no longer pink and perhaps a little golden on top. In a seperate bowl, mix together soup, milk, and lemon juice. When chicken is no longer pink, add this mixture into the skillet, reduce heat to medium/low and cover. Let this simmer, stirring occasionally for about 15 minutes (I use the simmer time to make the noodles and rice-o-roni). After the side dishes are prepared, turn off the heat and serve, enjoy! |
