I love nutmeg and it really shines in the crust of this simple dessert. I hope you enjoy it.
Ingredients:
1/3 cup butter, softened
1/4 cup brown sugar
1 cup flour
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1 cup small curd cottage cheese
1 egg
1 egg white
3 tablespoons lemon juice
1 cup sugar
2 tablespoons flour
1 tablespoon grated lemon peel
1/4 teaspoon baking powder
Directions:
1. In a mixing bowl, cream butter and brown sugar.
2. Combine flour, salt and nutmeg; add to creamed mixture.
3. Press into an ungreased 8 square baking dish.
4. Bake 350 for 18-20 minutes or until golden brown.
5. For filling, place cottage cheese, egg, egg white, and lemon juice in a blender or food provessor and process until smooth.
6. Add the sugar, flour, lemon peel and baking powder and process until well blended.
7. Pour over crust and bake at 350 for 30-35 minutes or until edges are lightly browned. Cool on a wire rack for 1 hour.
8. Refrigerate until chilled.
