Lemon Cheese Spritz Cookies for Christmas |

you've tasted these - they melt in your mouth - but usually people don't add the lemon zest, which makes All The Difference in how special these taste Ingredients:
8 ounces butter, softened |
3 ounces cream cheese, softened |
1 cup sugar |
1 egg yolk |
1/2 teaspoon lemon flavoring |
1 teaspoon grated lemon rind |
2 1/2 cups sifted flour |
1/2 teaspoon salt |
Directions:
1. Cream butter, cream cheese and sugar in a mixer.
2. Add egg yolk and flavorings.
3. Beat until light.
4. Shake flour through a fine sieve with the salt.
5. Add this to butter mixture until blended well.
6. Force through a cookie press or spritz gun onto cookie sheets.
7. Bake at 350 for 15 minutes. UNDERbake these; do not let them brown.
8. Makes 6 dozen.
