Ingredients:
1 baked 9 inch (23cm) pastry crust
1 pkg (113g) jell_o lemon pie filling
1/2cup granulated sugar
11/4 water
2 egg yolks
1 cup milk
1pkg(125g) philadeelphia creem cheese softed
1tbsp butter
2 egg whites
1/4 granulated sugar
Directions:
1. CHILL BAKED CRUST
2. COMBINE PIE FILLING MIX 1/2 CUP (125ML SUGAR AND 1/4 CUP (50ML) OF THE WATER IN SAUCEPAN BLEND IN EGG YOLKS, REMAINING 1 CUP (250ML) WATER AND MILK
3. COOK STIRRING CONSTANTLY OVER MEDIUM HEAT UNTIL MIXTURE COMES TO A FRLL BUBBLING BOIL.
4. BEAT EGG WHITES UNTIL FOAMY THROUGHOUT GRADUALLY BEAT IN 1/4 CUP (50ML) SUGAR AND CONTINUE BEATING UNTIL MIXTURE FORMS STIFF SHINY PEAKS
5. FOLD EGG WHITES INTO LEMON_CHEESE MIXTURE. SPREAD EVENLY IN BAKED PIE CRUST CHILL 5 MINUTES
6. SPOON REMAING PIE FILLING EVENLY OVER FILLING IN PIE CRUST. CHILL 3 HOURS BEFORE SERVING
7. MAKES ABOUT 8 SERVINGS
