This is an old bakers joy recipe... Its a quick and simple cheesecake to make.... Ingredients:
1 cup crushed vanilla wafers or graham crackers |
2 tablespoons butter, melted |
2 packages cream cheese, softened (8 oz each) |
1/2 cup cheddar cheese, finely shredded |
3/4 cup sugar |
2 tablespoons flour |
3 eggs |
1/4 cup fresh lemon juice |
1/4 cup whipping cream |
1/2 teaspoon lemon zest |
1/2 teaspoon vanilla |
Directions:
1. Spray bottom and sides of an 8 inch spring form pan with cooking spray. 2. Mix crumbs with butter; pat into prepared pan; bake at 350 degrees for 8 minutes. 3. Remove from oven to cool. 4. Beat cream cheese until light and fluffy. 5. Blend in cheddar cheese. 6. Gradually beat in sugar and flour. 7. Add eggs, one at a time, beating until smooth. 8. Mix in lemon juice and cream. 9. Stir in lemon zest and vanilla. 10. Bake at 350 degrees for 30 to 40 minutes. 11. Cool, then chill or serve at room tempature. 12. Garnish with lemon slices, grapes or mint leaves.... |
