Lemon Carrot Teacake

From a cookbook called Irish Cooking , a snack cake in time for St Patrick's Day.
Ingredients:
cake
1 1/2 cups all-purpose flour
1/2 tsp baking soda
1/2 tsp salt
1 stick butter
1 cup sugar
1 egg
1 tsp vanilla
1/2 cup milk
1/2 cup carrot, finely shredded
1 tbsp lemon juice
frosting
1 large bar cream cheese (8 ounces), softened
1/2 cup confectioner's powdered sugar
2 tbsp butter, softened
1/2 tsp vanilla
1 tbsp lemon juice
1 tsp grated lemon peel
Directions:
1. Preheat oven to 350 degrees.
2. Grease 9 inch square or 7x11 baking pan.
3. Combine and set aside flour, baking soda and salt.
4. Cream the stick of butter and the sugar until fluffy.
5. Add the egg and vanilla and beat well.
6. Add the flour mixture alternately with the milk, beginning and ending with flour.
7. Beat until well blended but do not overbeat.
8. Add the shredded carrot and lemon peel and blend in but do not overbeat.
9. Pour into prepared pan.
10. Bake 40 minutes or until a toothpick inserted into the middle comes out clean.
11. Remove from oven and cool for 10 minutes.
12. Remove from pan and cool completely.
13. For frosting, beat cream cheese and 2 tbsp butter until it is smooth and fluffy.
14. Add confectioner's sugar, lemon juice, vanilla and lemon peel.
15. Beat until smooth.
16. Frost cooled cake.
17. Garnish with strips of orange peel or as desired.
