This Bundt cake version of a lemon cake comes from A. Martinez , who says it's a perfect clone of Starbucks' lemon loaf. She found it in a Betty Crocker cookbook. Makes a large Bundt cake Sacabee Times post Ingredients:
2 3/4 cup sugar |
1 1/4 cup butter, softened |
1 teaspoon lemon extract |
5 eggs |
3 cups all-purpose flour |
1 teaspoon baking powder |
1/4 teaspoon salt |
1 cup evaporated milk |
2 to 3 teaspoons grated lemon peel |
Directions:
1. Preheat oven to 350 degrees. 2. Grease and flour a 12-cup Bundt cake pan. 3. Beat sugar, butter, lemon extract and eggs for 30 seconds on low speed, scraping bowl constantly. 4. Beat on high speed for 5 minutes, scraping bowl occasionally. 5. Sift flour, baking powder and salt together, then add alternating with milk on low speed. 6. Fold in lemon peel. Pour into pan. 7. Bake until wooden pick inserted in center comes out clean, 70 to 80 minutes. 8. Cool 20 minutes then remove from pan. 9. Drizzle a lemon glaze over cake, if desired. |
