My mother made this a lot when I was growing up and I just ran across the recipe. Thought I would share. Ingredients:
1 box yellow cake mix |
4 eggs |
3/4 c. oil |
1 tsp. lemon extract |
1 pkg. lemon jello |
glaze |
1 c. powdered sugar |
enough lemon juice to make it soupy |
Directions:
1. Dissolve Jello in 1 cup hot water and let cool. Beat first 4 ingredients for about 1 minute. Pour in Jello after it cools and beat another minute. Pour in greased 9 x 13 cake pan. Bake at 325 degree for 30 minutes. When done, poke holes in cake almost all the way to the bottom of the pan - I use a chopstick - and cover with glaze. Let it soak in good, cut and serve! |
