this butter an be put in a jar and kept in the refrigerator for several days...it is very good served on any kind of cake Ingredients:
3 large eggs |
3/4 cup sugar |
4 tablespoons lemon juice |
4 tablespoons butter |
1 grated lemon, rind of |
1/4 teaspoon salt |
Directions:
1. beat eggs till light.add sugar with lemon juice and grated lemon peel. 2. combine in a saucepan with butter and salt. 3. cook, stirring constantly until thickened, to a pudding consistency. 4. let cool and spread on cake. 5. serves 8. |
