A very easy recipe handed down from my Nana. It makes a lovely fresh filling for tarts and cakes. For an extra special cake filling, gently mix together with whipped cream. Ingredients:
3 eggs, beaten |
1 cup sugar |
1 tablespoon lemon rind, grated |
1/2 cup lemon juice |
60 g butter, chopped |
Directions:
1. Combine all ingredients in a heat-proof bowl. 2. Whisk constantly over simmering water until the mixture coats the back of a metal spoon. 3. Remove from the heat and pour into warm, sterilized jars. 4. When cool, store in the refrigerator till required. |
