Ingredients:
1/3 cup shortening |
1 cup sugar |
2 eggs |
1 1/2 cups sifted all-purpose flour |
1 1/2 teaspoons baking powder |
1/4 teaspoon salt |
1/2 cup milk |
grated rind of 1 lemon |
1/2 cup chopped pecans (optional) |
1/3 cup sugar |
juice of 1 lemon |
Directions:
1. Cream shortening; gradually add 1 cup sugar, beating well. Add eggs, one at a time, beating well after each addition. 2. Combine flour, baking powder, and salt; add to creamed mixture alternately with milk, beginning and ending with flour mixture. Mix well after each addition. Stir in rind and pecans, if desired. 3. Pour batter into a greased 8 1/2- x 4 1/2- x 3-inch loaf pan. Bake at 350° for 50 minutes or until a wooden pick inserted in center comes out clean. 4. Combine 1/3 cup sugar and lemon juice, stirring well; immediately pour over bread in pan. Cool in pan 10 minutes; remove from pan, and cool completely on wire rack. |
