Great Aunt Mabel loved coming to Florida on her vacation and she would make some great quick breads, this one is a favorite. Haven't met a lemon flavored anything I didn't like. This is easy and is great toasted with a slather of cream cheese. Ingredients:
6 tablespoons of butter |
1 cup of sugar |
2 eggs beaten |
1/2 cup of milk |
grated rind of one whole lemon |
1 1/2 cups of flour |
1 teaspoon of baking powder |
1/4 teaspoon of salt |
1/ 1/2 cups of chopped pecans |
1/3 cup of sugar |
juice of one lemon |
Directions:
1. Cream the butter and the sugar. 2. Add the eggs, milk and lemon rind. 3. Sift together dry ingredients and add to creamed mixture. 4. Stir in nuts, mix lightly. 5. don't over beat or it will get tough. 6. Spoon into a greased 9 x 5 loaf pan. 7. Bake at 350 degrees for one hour or until it tests done. 8. Immediately pour over the loaf, the 1/3 cup of sugar and lemon glaze whiile the bread is still hot!. 9. Cool in pan on rack. 10. Wrap well in foil and refrigerate. |
