I didn't want to try this because of margarine as an ingredient...I'm so happy that I finally tried it..This is an easy and delicious bread for lemon lovers.....From the Red Lion Inn Cookbook
Ingredients:
3/4 cup margarine
2 cups sugar
3 eggs
1 egg yolk
3 1/2 cups flour
1 tbls. plus 1/2 tsp. baking powder
1 1/2 tsp. salt
2 cups lemon pudding, prepared
3 tbls milk
Directions:
1. Preheat oven to 350
2. Grease two loaf pans
3. In mixing bowl, mix margarine and sugar with hand mixer
4. Add eggs, one at a time, mixing well after each addition
5. Sift dry ingredients
6. Add to egg mixture
7. Add lemon pudding and milk, and mix until well blended
8. Pour batter into loaf pans
9. Bake for 40-50 minutes until wooden pick inserted in the center comes out clean
10. * I love this with raspberry preserves*
