I had this bread at a restaurant a couple of years ago. I never tasted anything like it. It was served with salad and can be served with omelets. From, How Many Potatoes in a Pound?
Ingredients:
3/4 c shortening
2 c sugar (can be reduced)
2 tsp. baking powder
4 eggs
1 tsp. salt
1 c milk
3 c flour
1 c chopped walnuts
grated rind of 2 lemons
for glaze
juice of 2 lemons
1 c sugar (can be reduced)
Directions:
1. Preheat oven to 350 degrees.
2. Combine all ingredients.
3. Pour batter into 2 large loaf pans.
4. Bake for 1 hour.
5. Remove pan to rack to cool.
6. Glaze with juice of 2 lemons mixed with 1 cup sugar.
7. Keeps 2 to 3 weeks refrigerated.
