they remind me of lemon blueberry muffins! so sweet and SO yummy! Ingredients:
1 egg |
1 cup flour |
3/4 cup nonfat milk |
1 tablespoon sugar |
2 tablespoons applesauce (unflavored) |
1 tablespoon baking powder |
1/2 teaspoon salt |
2 teaspoons lemon peel (finely grated) |
1 teaspoon lemon juice |
1/2 cup blueberries (fresh or frozen) |
Directions:
1. Beat egg until frothy. 2. beat in remaining ingredients except blueberries, beating just until smooth. Gently stir in blueberries. 3. Grease a heated griddle. 4. For each pancake, pour about 3 tablespoons of batter from a large spoon or from pitcher onto the hot griddle. 5. Cook pancakes until puffed and dry around edges. Turn and cook other side until golden brown. 6. one serving = 2 pancakes. |
