Love the flavor combination of lemon and blueberries. Found this online and have been wanting to make it for the longest time. Ingredients:
1 1/2 cups flour |
1 tsp. baking powder |
1/4 tsp. salt |
6 tbls. unsalted butter, softened |
3/4 cup sugar |
2 large eggs |
1/2 tsp. vanilla |
1 tablespoon grated lemon zest |
1/2 cup milk |
1 cup fresh blueberries |
lemon glaze |
1/4 cup sugar |
2 tbls. fresh lemon juice |
Directions:
1. Preheat oven to 350 2. Butter or spray bottom and sides of a loaf pan (9 x 5 x 3 ) 3. In mixing bowl, whisk together flour, baking powder and salt 4. In another mixing bowl, beat butter about 1 minute 5. Add sugar and continue to beat until light and fluffy 6. Add eggs, one at a time, beating well after each addition 7. Beat in vanilla and lemon zest 8. With mixer on low, add flour mixture (in three additions) and milk (in two additions) alternately, starting and ending with flour 9. Mix only until combined 10. Gently fold in blueberries 11. Add batter to loaf pan 12. Bake 55-60 minutes, or until the bread is golden brown and a toothpick inserted in center comes out clean 13. Glaze 14. In small saucepan, bring 1/4 cup sugar and 2 tbls. lemon juice to a boil, stirring until sugar dissolves 15. Remove bread from oven and place on wire rack 16. Pierce loaf all over with toothpick 17. Brush top of loaf with hot lemon glaze 18. Cool loaf in pan for about 30 minutes then remove from pan and let cool completely on a wire rack |
