I came up with this when I was trying to get rid of some blueberries years ago. I just found it in one of my old notebooks. Its great even on the second morning.. If it lasts that long. Makes the whole house smell wonderful. Ingredients:
1/3 cup of melted butter |
1 cup sugar |
3 tablespoons fresh lemon juice |
2 eggs |
1 1/2 cups all-purpose flour |
1 teaspoon baking powder |
1 teaspoon salt |
2 tablespoons grated lemon zest |
1/2 cup milk |
1/2 cup chopped walnuts |
1 cup fresh blueberries or 1 cup frozen blueberries |
2 tablespoons lemon juice |
1/4 cup powdered sugar |
Directions:
1. Preheat oven to 350. 2. Lightly grease a 8x4 inch loaf pan. 3. In a bowl, beat butter, 1 cup of sugar, juice and eggs. 4. In separate bowl combine flour, baking powder, salt, and lemon zest; stir into egg mixture alternately with milk. Gently fold in nuts and blueberries. 5. Pour batter into pan. Bake for 60-70 minutes or until toothpick comes out clean. Cool in pan for 10 minutes. 6. Meanwhile, combine lemon juice and powdered sugar in a small bowl. Turn bread onto a rack and drizzle with glaze. 7. You can sub cranberries, if so use orange juice in place of the lemon or the lemon is still wonderful. Enjoy. |
