Neat little jewels of lemon glazed excellence. Easy recipe from a rural Arkansas kitchen. Ingredients:
1 yellow cake mix |
4 eggs |
1 box lemon pudding |
3/4 cup oil |
glaze |
1 box confectionary sugar |
3 tbsp water |
1 tblsp lemon zest |
1/3 cup lemon juice |
3 tblsp oil |
Directions:
1. Mix all of the above and beat 2-3 minutes
2. Fill small muffin pans half full

4. bake at 350 deg.F for approx. 12 minute

8. Combine all of the ingredients and dip top of muffins into glaze and set aside
