i got this recipe out of paula deen's best dessert mag, Ingredients:
1 ( 18.25 oz ) box yellow cake mix |
1 ( 3.4 oz ) box instant lemon- flavored pudding mix |
4 large eggs |
3/4 cup confectioners' sugar |
1 tablespoon lemon zest |
1/3 cup fresh lemon juice |
3 tablespoons water |
3/4 cup plus 3 tablespoon vegetable oil, divided |
Directions:
1. preheat oven to 350 2. spray miniature muffin pan with nonstick cooking spray 3. in a large bowl combine cake mix, pudding mix, eggs and 3/4 cup oil beat at medium speen with a electric mixer for 2 minutes 4. spoon about 1 tablespoon of batter into each muffin cup bake for 12 mins. turn cakes onto a cloth towel. 5. in another bowl sift confectioners sugar, lemon zest, lemon juice, remaining 3 tablespoons of oil and water. keep stirring until smooth. dip cakes into glaze mixture while cakes or still warm. make sure to cover as much as possible. place cakes on a wire rack with wax paper underneath to catch drips. make sure glaze is set before storing in a airtight container |
