A plain biscotti with a lemony crunch! Ingredients:
2 sticks butter, softened |
2 cups sugar |
2 eggs, beaten |
5 tsp each lemon and vanilla extract |
5 cups sifted flour |
5 tsp baking powder |
1 tsp salt |
approx. 1/2 cup milk (to make dough soft and pliable) |
Directions:
1. Preheat oven to 350F. 2. Cream butter and sugar in a large mixing bowl. 3. Add eggs and extracts. 4. Mix in the dry ingredients. 5. Knead the dough on a floured board or worktop until soft and pliable. 6. Divide dough into 10 balls. 7. Roll each ball like a thick sausage and place 5 inch sausages on a greased cookie sheet. 8. Flatten bottom by pressing down gently, but keep crescent shape on top. 9. Bake for 30 minutes. 10. Remove from oven and cut diagonally. 11. Turn cookies to bake on sides for another 5 minutes. 12. Let cool and store in tins. 13. Enjoy! |
