Inventive uses for oatmeal and lemon curd. Ingredients:
1/2 cup quick-cooking rolled oats |
1/4 cup pure cranberry juice (not hfcs-laden cranberry cocktail) |
1/2 cup 1% low-fat milk |
2 tablespoons lemon curd |
1 handful dried cranberries |
1 handful of chopped pecans |
Directions:
1. Whisk the oats, cranberry juice, milk, and lemon curd together in a microwave-safe bowl. Nuke for 1-2 minutes or until fully cooked. 2. Add the cranberries and pecans to garnish. |
