Ingredients:
1 teaspoon canola oil |
1 cup chopped onion |
1 cup chopped celery |
3 cups fat-free, less-sodium chicken broth |
1 1/2 cups uncooked brown basmati rice |
1/4 cup currants |
1/4 cup pine nuts, toasted |
1/4 teaspoon salt |
1/4 teaspoon pepper |
1 teaspoon fresh lemon juice |
Directions:
1. Heat oil in a large saucepan over mediumhigh heat. Add onion and celery; sauté 5 minutes or until tender. Add broth, rice, and currants; bring to a boil. Cover, reduce heat, and simmer 55 minutes or until rice is tender and liquid is absorbed. Stir in pine nuts, salt, pepper, and lemon juice. |
